Cake Ingredients:

  • 235ml vegetable oil
  • · 100g natural yogurt
  • · 4 large eggs
  • · 2 tsp vanilla extract
  • · ½ an orange zested.
  • · 265g plain flour
  • · 4 tsp baking powder
  • · 300g light muscovado sugar
  • · 2½ tsp ground cinnamon
  • · ¼tsp fresh nutmeg finely grated.
  • · 265g carrot (about 3), grated.
  • · 100g sultanas or raisins
  • · 100g walnuts or pecans, roughly chopped (optional)

 Icing Ingredients 

  • · 100g butter, softened
  • · 300g icing sugar
  • · 100g full-fat cream cheese
  • · Vanilla extract

Marzipan Bunny Ingredients:

  • · Marzipan ( or sugarpaste)
  • · Food colour orange and green

Equipment:

  • · 2 Sandwich tin 20 cm
  • · Whisk / Eletric mixer
  • · Bowls
  • · Spoons
  • · Baking paper
